No you dont need to book - the Italian Train service is excellent. I would suggest you take the train from Fiumincino to Termini Stazione (central rome) and get a connection to florence from there - that is the main station in Rome - im not sure if u can get a train to florence direct from fiumincino - but dont worry - just buy ur ticket in the station.
Enjoy - Florence is absolutely beautiful - by far my favourite place in Italy.

For a peace of mind just book in advance. Search the train schedule, just google it.
